Recipe: Beer-Braised Greens

You don't need to trick us into eating our leafy greens. They're delicious. And the fact they've got loads of vitamins A, C, and K, not to mention a slew of cancer-fighting antioxidants and minerals is a healthy bonus.

Making greens tasty doesn't require a lot of ingredients or even a lot of time. Adding beer is almost like taking a shortcut through flavor-town. A porter, like our Chocolate Maple Porter, just brims with a roast-filled, chocolatey maple sweetness that is a great vegetarian cheat lending greens richer flavors typically reserved for those slow-cooked with meat.

What You Need

  • 1 bunch mustard greens, kale, or collards; roughly chopped
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 cup dark, flavorful beer (like our Chocolate Maple Porter)
  • salt and pepper

What You Do

  1. In a large pot heat 2 quarts of water and a large pinch of salt to a boil. Add greens a blanch for 1 minute. Remove.
  2. In a large skillet heat oil over medium-high heat. Add garlic and saute for 1 minute. Add greens and beer, cover simmer until tender (about 6 minutes), season with salt and pepper. Enjoy!
