Recipe: Spent Grain Apple Hand Pies

Never has a food been named so perfectly as the hand pie--it really is an entire small pie that fits right in your hand. Typical fillings range from the savory (caramelized onion and goat cheese) to the sweet (blackberry)--we fall somewhere in the middle stuffing our hand pies with apples, raisins, walnuts, and coconut, all wrapped in a hearty spent grain dough. These delightful easy-to-travel pastries are fantastic grab-on-the-go breakfast treats.

 

FOR THE FILLING

  • 3 apples, peeled, cored, and cut into matchsticks
  • 1 tablespoon butter
  • 1/2 cup raisins
  • 1/2 cup walnuts, coarsely chopped
  • 1/4 cup shredded coconut
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon cinnamon

FOR THE DOUGH

  • 1 cup Spent Grain Flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 5 tablespoons butter, chilled and cubed
  • 1/2 cup whole milk

WHAT TO DO

  1. Preheat oven to 425 degrees F.
  2. In a saute pan over medium heat combine all filling ingredients and cook for 3-5 minutes until butter is melted and apples have softened. Set aside while you make your dough.
  3. In a mixing bowl sift together flours, baking soda, salt and sugar. Blend in cubed butter with your fingertips until it resembles a coarse meal. Add in milk and stir until just combined. On a floured work surface knead dough a couple times until it just comes together.
  4. Roll out dough into a large rectangle 1/8" thickness. Using a pizza wheel cut dough into 4"x4" squares. Spoon filling into the center of each square and fold over - crimping edges with a fork.
  5. Bake on a well buttered sheet pan for 12 minutes or until dough is golden brown. Let cool slightly (or completely). Enjoy on the go.
