We love the vanilla and char notes bourbon gets from aging in oak barrels (but certainly couldn’t fit one in our kitchen!) To mimic that effect on the stove-top we soak oak chips in bourbon overnight - then add them to the boil. The result: a 7% ABV light caramel Belgian dubbel with a bourbon kick.
