Beer & Ginger Grilled Chicken

Recipe: Beer & Ginger Grilled Chicken

A grill does amazing things to chicken on the bone—especially when that chicken's marinated in beer. Smoky and slightly charred, yet still super-moist and flavorful, it's the perfect platter-topper for any outdoor weekend by the grill. Adding a delicious beer means delicious chicken! If you don't have any Grapefruit Honey Ale on hand, try Left Hand Brewing's Good JuJu—a ginger-packed pale ale.

What You Need for the Marinade

  • 8 chicken thighs (bone-in, skin-on)
  • 12 ounces light, citrusy beer (like our Grapefruit Honey Ale)
  • 2 tablespoons soy sauce
  • 3 cloves garlic, crushed
  • 1-inch piece of ginger, peeled and smashed
  • 1/2 serrano chili pepper, thinly sliced

What You Need for the Sauce

  • 12 ounces light, citrusy beer (like our Grapefruit Honey Ale)
  • 2 tablespoons soy sauce
  • 3 cloves garlic, crushed
  • 1-inch piece of ginger, peeled and smashed
  • 1/2 serrano chili pepper, thinly sliced
  • 3 tablespoons light brown sugar

What You Do

  1. In a large ziplock bag or non-reactive container, combine chicken and all ingredients in marinade and let marinate in the refrigerator at least 5 hours and up to overnight.
  2. In a small saucepan, over medium-high heat, add all ingredients for sauce. Bring to a boil, whisking, and then reduce heat to low. Let cook for 12-15 minutes until liquid has reduced to a 1/3 and sauce coats the back of a spoon.
  3. Heat grill to medium-high heat. Baste chicken with sauce and grill skin side down for 10-12 minutes. Flip, re-baste both sides and grill an additional 8-10 minutes until internal temperature reaches 165oF. Enjoy!
