Warm Beet Salad w/ Beer Vinaigrette

Beets are packed with vitamins and minerals. They also have a good amount of sweetness (why we sometimes use them in gluten-free beer recipes) that's delicately balanced against a rich beer &amp; balsamic vinaigrette.</p> <p class="wp-blank">Taken hot out of the pan and spooned onto cold yogurt and topped with pistachios, this dish will win over anyone who thought cooking with beer couldn't taste fresh and healthy.</p> <p class="blank-wp"><!--more--></p>   <ul> <h3>What You Need for the Beets</h3>  <li>9 small to medium beets</li>  <li>1/2 cup Belgian abbey style ale (We like New Year Beer from our <a href="http://brooklynbrewshop.com/beermakingbook" target="_blank">Beer Making Book</a>)</li>  <li>1/4 cup balsamic vinegar</li>  <li>1 tbsp brown sugar</li>  <li>1 tsp fennel seeds</li>  <li>salt to taste</li>  <li>1 cup water</li> </ul>  <ul> <h3>What You Need for the Bed of Yogurt</h3>  <li>1 1/2 cups plain yogurt</li>  <li>10 mint leaves (diced)</li>  <li>zest of 1 lime</li> </ul> <div>  <ol> <h3>What You Do</h3>  <li>Peel beets, and cut into quarters.</li>  <li>Bring 1 cup water to a boil. Salt liberally.</li>  <li>Add beets, and cover. Simmer for 10 minutes or until fork can easily pierce beets. Remove with slotted spoon.</li>  <li>In a separate pan, add beer and vinegar to a simmer.</li>  <li>Add fennel seeds, brown sugar, and beets. Simmer until vinaigrette thickens. Continue stirring to fully coat beets in sauce. Season with salt to taste.</li>  <li>In separate bowl, mix cold plain yogurt with diced mint and zest of 1 lime.</li>  <li>Spoon yogurt onto plate followed by beets. Top with pistachios and additional diced mint (optional).</li> </ol> </div>
